Cheese Whipped Toppings Recipes

For successful cheese whipped topping:
These toppings, refrigerated, will hold their volume and texture consistently for 5 days.

  • Put liquid ingredients in blender first.
  • Operate blender at lowest speed.
  • Add about ⅓ of the cottage cheese at a time; whiz until smooth.
  • Stop-stir-start method is helpful when a firmer consistency is desired.
  • Since the amount of liquid in cottage cheese varies, use more or less liquid to keep blender operating.
Alternate method: Press cottage cheese through a sieve (except the Pineapple-Cheese); add liquid ingredients; beat until fluffy.

Cheese Whipped Topping Recipe (2 cups)

  • ¼ cup evaporated milk
  • 2 tablespoons honey
  • 2 cups low-fat cottage cheese
To prepare this cheese whipped topping you do the following:
  • Put evaporated milk in blender; add honey and cottage cheese gradually whizzing.
  • Refrigerate until used.
  • Serve in place of whipped cream on pies, cakes, and other desserts.
Fruit-Cheese Whipped Topping Recipe (2¼ cups)

For this you need the following ingredients:

  • 1 tablespoon lemon juice
  • 1 tablespoon frozen orange juice concentrate, undiluted
  • 1 tablespoon pineapple juice
  • ¼ teaspoon grated lemon rind
  • 3 tablespoons honey
  • 2 cups low-fat small curd cottage cheese
To prepare:
  • Put juices and grated rind in blender; add honey and cottage cheese gradually while whizzing
  • Refrigerate until used
  • Serve as a topping for fruit desserts, pies, and cakes; use as a dressing for fruit salad.
Lemon-Cheese Whipped Topping (2¼ cups)

Ingredients:
  • ½ teaspoon grated lemon rind
  • 3 tablespoons lemon juice
  • ¼ teaspoon vanilla
  • ¼ cup honey
  • 2 cups low-fat cottage cheese
How to make the lemon cheese whipped Topping:
  • Put lemon juice and rind and vanilla in blender; add honey and cottage cheese gradually while whizzing.
  • Refrigerate until used.
  • Serve as topping for lemon or other pies; layer in parfait glasses with fruit such as sliced peaches, bananas, papaya, or blueberries, or freeze about 1 hour and serve as sherbet.
Pineapple-Cheese Whipped Topping (1⅓ cups)

Ingredients required:

  • ¾ cup crushed unsweetened pineapple, with liquid
  • ½ teaspoon vanilla
  • 1 teaspoon honey, to taste
  • 1 cup low-fat cottage cheese
How to make the pineapple whipped Topping:-
  • Put pineapple and vanilla in blender; add honey; add cottage cheese gradually while whizzing.
  • Refrigerate until used.
  • Serve as a topping for desserts or as a dressing for fruit salad.
Variation: Replace part or all of the pineapple with other fruit such as strawberries (gives pink color), peaches, bananas (these turn dark quickly, so should be used immediately).
