How to Make No knead rolls

It is now time to learn how to make no knead rolls.

To make 2 dozen no knead rolls you will need the following ingredients : -

  • 1½ cups of warm water (110 - 115° F 
  • ¼ cup sugar or light molasses
  • 2 pkgs. active dry yeast (2 tablespoonss)
  • 1½ cups sifted enriched all- purpose flour
  • ½ cup soy  flour
  • 2 cups stirred whole wheat fllour
  • 1½ teaspoons salt
  • 3 tablespoons oil
  • egg
How To Make No Knead Rolls.

Add sugar and yeast to warm water in a large mixing bowl; let stand 10 minutes.
Add half of the flour and all the other ingredients.
Start mixer on medium speed (or beat by hand) and beat until smooth ( 1½ to 2 minutes); stir in the rest of the flour by hand.
Scrape batter down from sides of the bowl
Cover bowl and let rise in warm place until doubled (about 30 minutes)
Stir batter 20 to 25 strokes.
Coat 2 dozen muffin cups (or 2 29-oz. tin cans) with vegetable shortening or a vegetable release coating.
Fill muffin cups ½  full ( or cans 1/3 to ½ full).
Let rise in warm place until batter reaches tops of muffin cups (20 to 30 minutes).
Bake at 425° F. 10 to 15 minutes or until well browned

VARIATION  
For raisin rolls, add ½ cup raisin and 1 teaspoon grated orange rind to batter; use light molasses in place of sugar.
