Originally Hoecake was made of Indian meal, water, and salt, sometimes baked in a fireplace on the blade of a hoe. To make 12 hoecakes we need the following ingredients;-
- 1½ cups unrefined yellow cornmeal
- 1 tablespoon brown sugar
- ½ teaspoon salt
- 1½ cups boiling water or more
- ¼ cup oil
- 2 eggs
How To Make Hoecake
- Combine dry ingredients.
- Add all at once to boiling water. Stir until batter clings together in a ball, pulling away form the sides of the kettle. Remove from heat.
- Add oil and beat.
- Add unbeaten eggs, one at a time, beating briskly after each addition until completely blended.
- Drop by tablespoonfuls onto lightly oiled cookie sheet.
- Bake at 400° F. until delicately browned (about 30 minutes).
