To prepare 9 servings of eggplant creole we will need the following ingredients:-
- 1 medium onion, minced
- ⅓ cup minced green pepper
- 1 cup sliced celery
- 2 tablespoons oil (olive preferred)
- 1¾ cups chopped tomatoes
- 1 medium eggplant (about 1½ lbs.) cut in ½-inch cubes
- 2 teaspoons salt
- ½ teaspoon sugar
- ½ teaspoon sweet basil
- 1 or 2 bay leaves, crushed
- ½ teaspoon ground coriander (optional)
- 1 cup Tasty Crumbs.
How to make Eggplant Creole
- Saute onion, pepper, and celery in the oil until crispy tender; and the tomatoes and bring to a boil.
- Add eggplant and seasonings; mix well.
- Put into casserole; top with Tasty Crumbs.
- Bake at 375° F. until tender (30 to 45 minutes).
- Serve hot.
