How To Make Eggplant Creole


To prepare 9 servings of eggplant creole we will need the following ingredients:-
  • 1 medium onion, minced
  • ⅓ cup minced green pepper
  • 1 cup sliced celery
  • 2 tablespoons oil (olive preferred)
  • 1¾ cups chopped tomatoes
  • 1 medium eggplant (about 1½ lbs.) cut in ½-inch cubes
  • 2 teaspoons salt
  • ½ teaspoon sugar
  • ½ teaspoon sweet basil
  • 1 or 2 bay leaves, crushed
  • ½ teaspoon ground coriander (optional)
  • 1 cup Tasty Crumbs.
How to make Eggplant Creole
  • Saute onion, pepper, and celery in the oil until crispy tender; and the tomatoes and bring to a boil.
  • Add eggplant and seasonings; mix well.
  • Put into casserole; top with Tasty Crumbs.
  • Bake at 375° F. until tender (30 to 45 minutes). 
  • Serve hot.
