Gazpacho Salad Recipe

Now it is time to learn how to prepare Gazpacho salad. To make 6 servings of this salad we need the following ingredients:-

  • 1 medium cucumber
  • 4 large ripe tomatoes, peeled
  • 1 small red or green pepper
  • 2 small onions, thinly sliced
  • 2 tablespoons olive oil
  • 1½ tablespoons lemon juice
  • 1 teaspoon garlic salt
  • 3 tablespoons minced parsley
How to prepare the Gazpacho salad
  • Peel cucumber, leaving every third strip unpeeled.
  • Chop cucumbers, tomatoes, and pepper.
  • Combine all ingredients.
  • Serve with a steaming dish of beans as an accompaniment for a la king entrees, tofu, and toast; or serve over shredded lettuce, spinach, dandelion, endive, escarole, mixed greens, or over tossed green salad with croutons.
