Fresh Peach Ice Cream Recipe

To make 6 servings of fresh peach ice cream you will need the following ingredients:

  • 1 cup mashed ripe peaches
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 cup chilled evaporated milk or soy milk
  • 3 tablespoons water
  • 2-3 drops almond flavoring (optional)
How to Make the fresh peach ice cream
  • Combine all ingredients in mixing bowl or in blender.
  • Freeze in a 1-quart ice cream freezer, using 6 parts ice to 1 part coarse salt; remove dasher. Cover top of freezer with several thicknesses of wax paper; replace lid. Pack in ice and salt, using 4 parts ice to 1 part salt. Allow to ripen 1 hour. Or store in refrigerator tray.
Alternate Method: To freeze in refrigerator: beat the chilled evaporated milk with lemon juice until thick; stir in other ingredients. Pour into ice-cube trays; put into freezer. Beat thoroughly when about half dozen. Freeze until ice cream consistency.

Variation: Fresh apricots or cooked apricot puree may be used.


How To Make Yogurt Ice Cream

For the yogurt ice cream recipe we need the following ingredients for 6 servings:

  • 1 recipe Whipped Topping, except use only ⅓  cup evaporated milk in place of the ½ cup in the recipe
  • 1 carton (8-oz.) red-rasberry-flavored low-fat yogurt or strawberry, blueberry, lemon, or other flavors

How to make the Yogurt Ice Cream

  • Make Whipped Topping; immediately add raspberry yogurt; stir only until smooth.
  • Pour immediately into ice cube tray; other containers may take longer to freeze.
  • Put into freezer immediately.
  • Freeze  1½ hours or longer until desired consistency.
  • Serve frozen.
NOTE: This keeps well up to a day after freezing.

How To Make Peanut Butter Balls or Dandies

Below are the ingredients you would need to prepare 24 balls of peanut butter dandies:

  • ½ cup peanut butter
  • ½ cup honey or light molasses
  • ¾ cup toasted wheat germ or wheat flakes
  • ¾ cup nonfat dry milk
  • ½ teaspoon vanilla or maple flavoring (optional)
How to make the peanut butter balls or dandies:
  • Cream peanut butter and honey; add nonfat dry milk, wheat germ, and flavoring; mix well.
  • Form into balls about the size of a walnut.
  • Roll in additional wheat germ or fine, dried coconut.
  • Refrigerate until served.
Note: Young children like to make these. Dandies can be wrapped in small pieces of wax paper and twisted at the ends.

Variations: 
  1. Use sorghum in place of honey.
  2. Use dry soy milk powder in place of nonfat milk.
  3. Add ¼ to ½ cup raisins.

Fruit Punch Recipes

Below are the ingredients you would need to make 6 cups or 12 servings of a fruit punch:

  • 3 cups unsweetened pineapple juice, chilled.
  • ¾ cup apricot nectar, chilled
  • 2 bananas, chunked
  • 2 oranges, peeled and cut up
  • 2 cups cold water (optional)
  • A bit of orange rind
How to make the fruit punch
  • Whiz all the ingredients in blender.
  • Serve at once, garnished with a sprig of mint.
Variations: 
  1. Add 2 or 3 tablespoons frozen orange juice concentrate.
  2. Add a few strawberries.

GARNISH WITH PUNCH

  • Put a cherry, berry, grape, melon ball, wedge of orange, lemon, lime, or pineapple, or sprig of mint in each section of ice cube tray.
  • Fill with water and freeze.
  • Unmold and serve in glasses - or in the punch bowl
For the Punch Bowl
  • Fill ring mold ⅔ full of water and freeze (or 1½ inches in bottom of a bowl).
  • Arrange berries, cherries, thin slices of lemon, lime, orange, pineapple, et cetera, or sprig of mint, flowers, et cetera, on top.
  • Cover with water and freeze again.
  • Umold and float in punch bowl.

Banana-Date Shake Recipe

To prepare 2 servings of banana-date shake we need the following ingredients:

  • ½ cup ice water
  • A drop of vanilla
  • 4 pitted dates
  • 3 tablespoons soy milk powder or ⅓ cup nonfat dry milk
  • ½ frozen banana, chunked
How to prepare the banana date shake

  • Whiz water, vanilla, and dates in blender until smooth; while continuing to whiz add milk powder and banana.
  • Serve immediately as a dessert drink; makes a nourishing, quickie breakfast.

Carob Malt Syrup

To prepare Carob Malt Syrup, a vegetarian dessert we need the following ingredients:

  • 2 cups water
  • 1 tablespoon flour
  • ½ teaspoon salt
  • 1 cup carob powder
  • ¼ cup honey or brown sugar
  • 2 teaspoons vanilla
  • 1 cup plain malted milk

How to make the carob-malt syrup

  • Stir water gradually into flour and salt for a smooth mixture.
  • Simmer, stirring constantly until thickened; cool slightly.
  • Stir in remaining ingredients.
  • Refrigerate in covered container until used.
  • Stir in about 3 tablespoons per cup of milk or to taste; serve hot or cold; use a teaspoonful as topping for a dessert.
Note: This keeps 4 or 5 days in the refrigerator, covered.

How To Make Whipped Topping

To make whipped topping of 2½ cups you will need the following ingredients:-

  • ½ cup evaporated milk, chilled several hours
  • 1½ teaspoons lemon juice
  • 1 tablespoon honey
  • ¼ teaspoon vanilla
  • Dash of salt.
Steps in the making of whipped topping:
  • Measure evaporated milk and chill with mixing bowl and beaters 1 hour or longer.
  • Beat milk to consistency of whipped cream; quickly add remaining ingredients while continuing to beat. Work quickly so topping does not warm to room temperature.
  • Serve immediately or freeze immediately.
Variation: For use in frozen desserts,  see Yogurt Chiffon Pie, Yogurt Ice cream, Strawberry Mousse, Coconut-Orange "Creame" and Red Fruit Ripple.

Low-Fat Whipped Topping (2½ cups)

Ingredients:

  • ⅓ cup ice water
  • ⅓ cup nonfat dry milk
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar or 1½ tablespoons honey
  • 1 teaspoon vanilla
How to Make the low fat whipped topping.
  • Measure water and nonfat dry milk and chill with mixing bowl and beaters 1 hour or longer.
  • Beat the nonfat dry milk and water until consistency of whipped cream. Add the remaining ingredients while continuing to beat. Work quickly so topping is not allowed to become room temperature.
  • Serve immediately or Freeze immediately.
Three things are important to the success of the above.
  1. Mixing bowl, beater, and main ingredients (except honey) must all be thoroughly chilled. Topping will not thicken unless very cold. A warm room, warm measuring cup, and any delay in beating topping can make the difference between failure and success!
  2. A hand rotary beater or an electric mixer must be used. A blender will not whip topping past the runny stage.
  3. These toppings must be served immediately or put in freezer immediately as they soon return to a liquid.



Cheese Whipped Toppings Recipes

For successful cheese whipped topping:
These toppings, refrigerated, will hold their volume and texture consistently for 5 days.

  • Put liquid ingredients in blender first.
  • Operate blender at lowest speed.
  • Add about ⅓ of the cottage cheese at a time; whiz until smooth.
  • Stop-stir-start method is helpful when a firmer consistency is desired.
  • Since the amount of liquid in cottage cheese varies, use more or less liquid to keep blender operating.
Alternate method: Press cottage cheese through a sieve (except the Pineapple-Cheese); add liquid ingredients; beat until fluffy.

Cheese Whipped Topping Recipe (2 cups)

  • ¼ cup evaporated milk
  • 2 tablespoons honey
  • 2 cups low-fat cottage cheese
To prepare this cheese whipped topping you do the following:
  • Put evaporated milk in blender; add honey and cottage cheese gradually whizzing.
  • Refrigerate until used.
  • Serve in place of whipped cream on pies, cakes, and other desserts.
Fruit-Cheese Whipped Topping Recipe (2¼ cups)

For this you need the following ingredients:

  • 1 tablespoon lemon juice
  • 1 tablespoon frozen orange juice concentrate, undiluted
  • 1 tablespoon pineapple juice
  • ¼ teaspoon grated lemon rind
  • 3 tablespoons honey
  • 2 cups low-fat small curd cottage cheese
To prepare:
  • Put juices and grated rind in blender; add honey and cottage cheese gradually while whizzing
  • Refrigerate until used
  • Serve as a topping for fruit desserts, pies, and cakes; use as a dressing for fruit salad.
Lemon-Cheese Whipped Topping (2¼ cups)

Ingredients:
  • ½ teaspoon grated lemon rind
  • 3 tablespoons lemon juice
  • ¼ teaspoon vanilla
  • ¼ cup honey
  • 2 cups low-fat cottage cheese
How to make the lemon cheese whipped Topping:
  • Put lemon juice and rind and vanilla in blender; add honey and cottage cheese gradually while whizzing.
  • Refrigerate until used.
  • Serve as topping for lemon or other pies; layer in parfait glasses with fruit such as sliced peaches, bananas, papaya, or blueberries, or freeze about 1 hour and serve as sherbet.
Pineapple-Cheese Whipped Topping (1⅓ cups)

Ingredients required:

  • ¾ cup crushed unsweetened pineapple, with liquid
  • ½ teaspoon vanilla
  • 1 teaspoon honey, to taste
  • 1 cup low-fat cottage cheese
How to make the pineapple whipped Topping:-
  • Put pineapple and vanilla in blender; add honey; add cottage cheese gradually while whizzing.
  • Refrigerate until used.
  • Serve as a topping for desserts or as a dressing for fruit salad.
Variation: Replace part or all of the pineapple with other fruit such as strawberries (gives pink color), peaches, bananas (these turn dark quickly, so should be used immediately).



Orange Cheese Whipped Toppings

For this orange cheese whipped topping you need the following ingredients: -

  • ⅓ cup frozen orange juice concentrate, undiluted
  • 1 cup low-fat cottage cheese
To prepare this whipped topping you do the following:-
  • Whiz orange juice concentrate and cottage cheese in blender until smooth. 
  • Refrigerate until used.
  • Serve as a topping  for desserts or as a dressing for fruit salad.


Fresh Fruit Dessert Suggestions

For those who like me enjoy fresh fruit dessert, here are a few suggestions:-

  1. Have a fruit centerpiece from which to select dessert.
  2. Serve washed whole pears or apples with a fruit  corer and divider. Individual sections will add variety as a light dessert.
  3. Arrange a platter of peeled banana spears, pineapple chunks, and orange slices; garnish with red grapes or berries and sprigs of mint.
  4. Serve wedges of peeled papaya, melons, and citrus fruits for a mouth watering climax of the meal. Serve on bed of watercress or alfalfa sprouts with a flower accent. Strawberries give a colorful garnish.
  5. Alternate peeled slices of cantaloupe or honeydew (or any kind of melon) with sliced red plums and peaches; garnish with grapes.
  6. Fruit pick-ups: pitted cherries, whole strawberries or other berries, melon balls or cubes, papaya cubes, pineapple chunks, seedless grapes, pieces of unpeeled red apples, orange sections, thick banana slices, dipped in citrus juice or rolled in coconut. Slip a combination of any of these or other fruit onto toothpicks or plastic skewers, or use without toothpicks to decorate an appetizer tray. Be sure fruits are fresh and cold.
  7. Freeze large block of ice; set on tray; put strawberries, chunked pineapple, and papaya and melon balls on toothpicks and lay them on the ice, or serve fruit on beds of parsley on attractive plates or platter
  8. Assorted fruits, including plums, apricots, figs, grapes, cherries, persimmons, et cetera, make a colorful and delicious dessert.

Keep on hand an assortment of:
dried apricots, raisins, dates, apples, peaches, pears, pineapple, figs, prunes, et cetera, with a variety of almonds, walnuts, pecans, peanuts, sunflower seeds, pumpkin seeds, et cetera, for a ready-to-serve dessert.

Simple Raw Food Recipes

There are huge benefits for eating simple raw foods, particularly fruits and vegetables. With simple raw food recipes in vogue nowadays, restaurants have opened up serving only raw foods. One of these restaurants is known as Cafe Gratitude located in California. The cafe has published a cookbook titled, I Am Grateful: Recipes and Lifestyle of Cafe Gratitude. All the recipes in this book are from raw ingredients.                                                                             

While most people will find it extreme to go totally raw, there are huge benefits in including more raw foods in our diet. Raw foods are particularly helpful in providing the body with lots of vitamins, minerals and fiber which may be lost during the cooking process. 

One way you can include raw food in your diet is by trying to eat a piece of fruit with your breakfast and another midway through the morning as a snack. You can also add lots of fresh chopped vegetables to your sandwich at lunch and some Greek yoghurt or salsa. In fact all fruits and most vegetables can be eaten raw.
