How To Prepare Vegetable Spaghetti Sauce

We are committed to the promotion of vegan and vegetarian recipes as we believe that a vegan or vegetarian is a sure way of ensuring that you live a healthy life.In this post on vegetarian cooking we tackle how to prepare a vegetable spaghetti sauce.This spaghetti that you will learn in the following paragraphs can be served over whole wheat spaghetti, rice, beans and oven fried eggplants. You can combine one of these with the spaghetti we prepare in this post and put in a baking dish ready for baking until heated thoroughly.

You can use the following ingredients in the preparation of the vegetable spaghetti sauce : -

  • 1 clove garlic
  • 1 can or 6 oz tomato paste
  • 1 green pepper, diced
  • 1 teaspoon brown sugar
  • ½ cup chopped onion. , minced
  • 1 can (2¼ oz) sliced ripe olives (½ cup)
  • 2 tablespoons olive oil or other oil
  • 2 tablespoons chopped parsley
  • 1 teaspoon Italian seasoning or 1 bay leaf
  • 1 can (2 oz) mushroom pieces with liquid 
  • 1 can (28 oz) stewed tomatoes, cut up (3½ cups)
  •  ½ teaspoon sweet basil of oregano
  •  ½ teaspoon salt

Below is how to prepare vegetable spaghetti sauce using the ingredients above..



  • Saute the onion and garlic in the oil; add pepper and saute 2 minutes longer. 
  • Add rest of the ingredients as they are prepared; simmer 30 minutes to 1 hour. Add water if necessary to thin during cooking. It is improved if cooked 1 day ahead of serving, as are most tomato dishes.
